Tex-Mex is the food Austin argues about most, largely because everyone grew up with a version of it and is convinced theirs is correct. It is its own cuisine rather than a compromised Mexican one — yellow cheese, cumin, flour tortillas, sizzling fajita platters and bowls of queso are the point, not a shortcut.
